Everyone looks forward to brunch and we were absolutely thrilled to have received an invite from Sunglass Hut to attend their luxurious brunch with chef, Matt Manning.
The day was a media-only event where luxury was served on a plate of a prestige menu with a side of shades.
Matt Manning carefully curated the menu, using some of your favourite sunglass brands as inspiration to create a 6-course spectacle.
Here’s a look at how you too could indulge in luxury:
Canapés (Versace- Pop of Plum)
The prominent feature of the medusa medallion and bold pop of plum allowed for chef Manning to create a Beetroot hummus, Sago crisp | Purple baby beetroot shavings.
Amuse (Persol- Handcrafted Excellence)
Persol, meaning “For The Sun” is one of the remaining luxury brands to make significant use of handcrafting expertise. Your taste buds can explore Ostrich Tataki, Orange, Salsa Verde, Sweet Potato Chips, Teriyaki, and Parmesan.
First Course (Versace- The Key to Life)
In a world of deep fakes, avatars, and AI, we seek the reassurance of materials of enduring value. The first course explores Prawn & Coconut Black Rice Risotto, Sweetcorn Purèe, and Radish & Prawn Bisque, with a nod to the GRECA pattern on the temple of the sunglasses which makes reference to the ‘eternal flow’ of life.
Middle Course (Tiffany Co- Breakfast at Tiffany’s)
For the middle course, Chef Manning references ‘breakfast at twist’. Pan roasted scallops, Cauliflower, Black forest ham velouté, White chocolate, and Macadamia capture the colour of the frames as well as speaking on the bold acetate paired with a low profile which the Tiffany brand imbues.
The combination of flavours, a direct homage to the 90s and leaning heavily on Hollywood glamour cues.
Main Course (Burberry- Quintessential British Fashion)
The main course speaks on looking good, feeling good and doing better. Chef Manning brings out a Roast Loin of Elgin Lamb, Braised Neck Cottage Pie, Baby Turnips, Smoked Mash, Spinach, and Lamb Jus to speak on the fashion codes of Burberry during the 1960s and 70s – bold, bold and oversized in shape.
To Finish ( Burberry- Understated Luxury)
The cherry on top is understated luxury. Burberry is synonymous with pieces of the highest quality. Chef Manning creates easy-going textures using Raspberry sponge, Honeycomb, Strawberry meringue, and Earl gray ice cream to deliver a luxurious look with a minimalism of style.
